Did you hear Lucky Charms released limited edition JUST MARSHMALLOW pouches? I feel like all of our dreams finally came true with this release so of course, we HAD to make something with them. Don’t worry, even if you can’t find the pouches you can still make this recipe.
We came up with another version of our cereal crusted no- bake cheesecake and it is sooooo delicious, smooth, and vibrant!
Please keep in mind since this is a NO BAKE cheesecake, the texture is a bit different than a typical cheesecake. It is a lot softer and needs to be kept in the fridge or freezer while not eating it to ensure it all holds together especially if you live somewhere hot like us. It should NOT be left out on display for parties, gatherings etc.
- 16 ounces of softened cream cheese
- 1 1/2 cups cold heavy whipping cream
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 2 tsp lemon juice
- 6 cups lucky charms cereal
- 10 ounces of mini marshmallows
- 4 tbsp butter
- Lucky Charms Just Marshmallows (optional)
- Food coloring (optional)
Line the bottom of a 9-inch springform pan with parchment paper in a circle shape. Use cooking spray to grease the inside walls of the pan. Set aside.
Over medium heat the butter and once almost fully melted, add the marshmallows. Allow the marshmallows to melt almost fully and then add the lucky charms cereal. Remove the pan from the heat and mix well until fully combined.
Once combined, add the mixture into the springform pan and shape it to fit along the sides and bottom of the pan removing any excess cereal mixture. Using a cup measure works great for this part just make sure to grease the bottom of the cup measure to prevent sticking. The crust should be about 1 inch thick on the sides and 1/2 inch on the bottom. Place the crust in the fridge while you prepare the batter.
Using a hand mixer, beat the cream cheese until smooth. Add the powdered sugar, lemon juice, and vanilla then beat until fully combined. In a separate bowl, beat the cold heavy whipping cream until stiff peaks.
Fold in 1/3 of the heavy cream mixture to the cream cheese mixture and once combined, fold the rest of the heavy cream mixture in and combine.
If using food coloring, separate your mixture into 4 bowls and color each a different color. Remove the pan from the fridge and place scoops of the mixture on top of the crust one by one. Add Lucky Charms marshmallows mid way if you want but it is optional. (If skipping food coloring just pour the batter into the crust at once).
Gently bang the pan onto the counter a couple of times to allow the mixture to set into the pan. Top with more Lucky Charms marshmallows and place into the fridge overnight.
Once removed from the fridge you can add buttercream if you want like we did or just enjoy it as is. KEEP CHILLED WHILE NOT CONSUMING THE CAKE.
