What’s better than a slice of cheesecake? A cheesecake bar of course! These cookie monster themed bars are easy to make, creamy, and smooth with just the right amount of cookie crunch in them. It begins with a blue cheesecake base (because cookie monster, duh!) then filled with broken Chip’s Ahoy and Oreo cookies spread on top of a graham cracker crust for that perfect cookie lover dessert. Top each serving with a dollop of whipped cream and your sweet tooth is instantly satisfied!

Cookie Monster Cheesecake Bars
Ingredients
- 8 sheets graham crackers finely crushed
- 5 tbsp melted butter
- 16 oz softened cream cheese
- 1 cup heavy whipping cream
- 1 cup powdered sugar
- 6 chocolate chip cookies broken up
- 6 regular Oreos or 8 thin Oreos broken up
- A couple extra broken Oreos and chocolate chip cookies for topping
- Blue food coloring optional
Instructions
- In a large bowl, combine the finely crushed graham cracker and melted butter.
- Spread into a greased 8×8 or 9×9 pan then place in the freezer while you prepare the filling.
- In a large bowl, using a hand mixer, beat the cream cheese until smooth.
- Add the powdered sugar and heavy cream and beat until creamy and combined.
- Add the blue food coloring and mix again.
- Add the broken chocolate chip cookies and Oreos then fold them into the filling mixture.
- Spread the mixture on top of the graham cracker crust and top with extra broken cookies.
- Freeze for 4-6 hours and enjoy! ✨
